A new restaurant is opening in Dolores at the Sophia Retreat and Event Center.
To attract more locals, owners Vince and Mary Kramer decided to open the Sophia Bistro inside the main lodge.
"We want to be a gathering place for locals, not just out-of-town guests," Vince said.
Beginning May 1, The bistro will be open for dinner Thursday through Saturday, serving dishes created by chef Daniel Rossiter.
"The menu will be a little upscale, but reasonably priced," Rossiter said. "My dishes are so good and well presented, you'll want to take a picture before eating."
Rossiter has been cooking in the area since 1996. He went to culinary school in 2003 and has worked at Main Street Brewery and Shilohs in Cortez, and at Allred's Restaurant in Telluride.
"I'm excited to offer a fresh dining experience in Dolores," he said. "Our open dining area in the lodge is truly deluxe, with fantastic views."
Rossiter will use the lodge's large commercial kitchen for the new restaurant, which is licensed to serve liquor. The bistro will have a set menu along with daily specials. Reservations are strongly suggested. Call 882-4920.
