Ingredients:
1/4 cup butter
1/2 c sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup peeled and grated apples
1 1/2 cup quick cooking oatmeal
1/2 cup chopped walnuts
Directions:
Melt butter in a saucepan over medium heat. Mix in sugar, salt, cinnamon, and apples. Allow to boil for 1 minute and remove from heat. Add in oatmeal and walnuts. Stir well. Using a tablespoon, drop onto wax paper or nonstick pan. Allow to harden and cool for 30 minutes.
Freezing Directions:
After allowing cookies to cool for 30 minutes, flash freeze. Place into freezer bag, label, and freeze. To serve: thaw in fridge until desired softness or microwave for 1-2 minutes.
